Our family eats a lot of chicken! Here’s another quick and simple chicken dinner dish for the crock pot! Broccoli smothered in cheese makes it a kid friendly meal!

2 cups shredded cheddar cheese, divided
1/2 tablespoons cornstarch
4 boneless, skinless chicken breasts
1 10-ounce package of frozen chopped broccoli
1/2 white onion, chopped
1/2 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup brown rice, uncooked
1) Toss together half the cheddar cheese and the cornstarch; set aside.
2) Place chicken, broccoli, onion, broth salt and pepper and the cheddar cornstarch mixture into the slow cooker. Cover and cook on LOW for 4 hours.
3) Cook rice according to package instructions. Remove lid on slow cooker and sprinkle in remaining cheddar cheese and a little more salt and pepper. Wait for the cheese to melt a bit. Then serve with rice. Enjoy!
