Stuffed Shells

Prep Time: 45 minutes – 1 Hour
Cook Time: 40 – 45 minutes
# of Servings: Makes 22 shells

Ingredients:

  • 1lb ground beef
  • 1 jar of your favorite tomato/pasta sauce (I love newmans own)
  • 1/2 an onion chopped
  • 2 cloves of garlic minced
  • 1 250g box jumbo shells
  • 1 250g container of cottage cheese (drained)
  • Shredded mozzarella
  • ÂĽ – ½ cup Grated Parmesan
  • Italian herbs seasoning

Serve with Caesar salad & bread sticks

Preheat oven to 375*

  1. Cook the shells to al dente with a drizzle of olive oil to prevent sticking
  2. brown ground beef and toss in onions and garlic, drain any fat and add enough pasta sauce to coat mixture, simmer for a few minutes then transfer into a big bowl
  3. Then add the cottage cheese after it cools a bit and as much Parmesan as you want (I prob did 1/4-1/2 cup) and a couple shakes of Italian seasoning & mix well
  4. Pour some sauce into the baking dish to cover the bottom, fill the shells with the mixture and place in the dish open side up. If there’s any remaining sauce you can drizzle it on top. Then I sprinkle some more Parmesan and a little shredded mozzarella on top.
  5. Cover loosely with foil and bake on 375 for 40-45 minutes
