Premix and set aside:
1 1/4 c flour
2-4 tbsp brewers yeast *(if doing 4 don’t skimp on vanilla, maybe even add more, or increase water to 5tbsp)
Soak 2 tbsp flaxseed meal in 4 tbsp water. Set aside.
1cup soft butter
1c Brown sugar
1/2c white sugar
2eggs, one at a time
1c shredded coconut (unsweetened usually)
1-1.5c dark chocolate chips
Bake 15-18mins at 325
Cookies will flatten, so arrange them 3 inches apart.
Cool then store in an airtight container or freeze 👍🏼
Cut out yeast and they are regular cookies 🙂 enjoy
